With tempting sweetness and fresh acidity.
Variety composition: Sarig wine is a blend of 60% Cabernet Sauvignon, 40% Merlot.
The wine is aged in French oak barrels for 24 months, which gives it old world style flavors.
The wine is very complex and long, with balanced tannins, and the fresh acidity contributes to a long spicy aftertaste.
The Process of Wine Production
Before dawn, before the sun begins to shine, a team of vintners is at work harvesting the grapes in order to keep them at a cool temperature. When the grapes reach the winery, they enter the "crusher" machine to separate the branches from the grapes and undergo gentle pressing before being funneled to the cooled and isolated stainless steel containers. In these containers, the grapes undergo a 3 month fermentation process while constantly being stirred every 5 hours. At the beginning of this process, the wine tastes like a juice, in the middle it is like a soft drink, and at the end, it has the dry taste of the wine. At this stage, the mixture, which includes wine, grapes, seeds and peels, is transferred to the wine press machine to extract only the wine. The filtered wine is afterwards returned to stainless steel containers for another procedure in which the sediments produced from the grapes sink to the bottom.
